DVD2AVI/Mpeg2: Urgent!!

Hi Everyone, I have been doing professional authoring for quite some time, but so far it has been: Digital Betacam - Mpeg2 - Authoring - Burn disk. Now there's a new situation: I have an authored DVD from which I copied a folder to my hard drive with all the VOB,IFO and BUP files. I have only less than 24 hours to deliever the new authored DVD, so I desperately need to know how to get the mpeg2 and pcm/ac3 out of these VOB/IFO/BUP files in order to use them in my authoring software (Encore DVD). The menus and authoring I can handle, but I don't know how to recover those authoring compliant files (mpeg2, pcm/ac3...). Can anyone tell me what softwares to use for what, in this process??
